The master Dolores Gonzales Torres is the finest producer of mezcal in Chihuahua. The Lechugilla agave (little lettuce) is endemic to the Chichuchuan desert, although the term may cover a number of unclassified plants. Don Dolores is famous in the very geekiest of geek circles in mezcal. His product is exceptional and noted for being extremely intensely flavored. This miniture batch of mezcal was harvested when the plants, which grow wild, were about 7 years old. Roasted in the ground for five days and crushed by hand axe, the fermentation occurs in a mixture of stone and clay vats with well water. After 6 days of natural fermentation, it was double distilled and adjusted with heads and tails. Expect wild savory and funky aromas.
