Matchbook has partnered with the Culinary Institute of America to capture the essence of the Maillard reaction using a spirit distilled from organic Maine oats that was fat washed with browned butter, coffee-roasted oats and a touch of brown sugar. Nutty, toasty, roasty, sweet and savory, it's perfect for chilly nights and makes a great addition to the back bar.
